Matcha-Lemon Energy Balls
Matcha is an increasingly popular green tea. It is rich in antioxidants (mainly catechin), which makes it a major asset for our health. Many people like it to replace their coffee. For some, it offers that same much sought-after energy kick.
These matcha-lemon energy balls live up to their name! They will allow you to get through your trough of fatigue while looking after your health.

Ingredients
- 2 packets of Yumi Matcha-green apple oatmeal
- 1\2 cup Medjool dates (soaked in a little water to soften if necessary)
- 1 C. chia seeds
- 1\2 lemon (juice and zest)
- 1 C. tsp matcha powder
- 2 tbsp. maple syrup
- 2 tbsp. 1 tbsp nut butter of your choice
Preparation
Place all ingredients in a blender container. Mix until everything is incorporated.
Form small balls with the mixture by hand. Should yield about 10 balls.
Optional, roll the balls in a little matcha powder or grated coconut.
Eat right away or store in the fridge for later. Store for up to a week.
