High fiber energy cookies

Each of these energy cookies packs a ton of goodness and is the equivalent of a full meal. Whether you're running, hiking, or outdoors, they're perfect and carry so well!

Ingredients

  • 1 cup (250 ml) flaked oatmeal (Only Oats)
  • 1/2 cup (125 ml) liquid honey or maple syrup
  • 1/2 cup (125 ml) applesauce
  • 1/4 cup (60 ml) coconut oil, melted (Botanica)
  • 2 eggs, beaten
  • 1 cup Vanilla Perfect Protein Powder (Botanica)
  • 1/2 cup (125 ml) seedless golden raisins (Prana)
  • 2/3 cup (180 ml) Goji berries (Botanica)
  • 2/3 cup (180 ml) pumpkin seeds, toasted
  • 1/2 cup (125 ml) ground flax seeds
  • 1/4 cup (60 ml) whole flax seeds
  • 1 C. teaspoon (5 ml) cinnamon
  • 1/2 tsp. teaspoon (2 ml) salt
  • 1 egg white, beaten
  • Raw sugar

Instructions

Preheat oven to 375°F (190°C). Cover a baking sheet with parchment paper. Sprinkle with oatmeal and distribute. Toast the grits in the oven for 10 minutes, or until they begin to brown. Take out of the oven and let cool down.

In a large bowl, combine honey, applesauce, coconut oil and eggs. Mix. Add remaining ingredients to cooled oatmeal, except egg white and raw sugar. Mix well until combined.

Using a 1/3 cup (75 mL) measuring cup, transfer the dough to the covered baking sheet, leaving 1/2 inch (1.25 cm) space between the dough balls. Compress gently to obtain a uniform thickness. Brush each cookie with whipped egg white and sprinkle with raw sugar.

Bake for 12 to 15 minutes, until the cookies are firm and the edges begin to crisp. Let cool on rack. Can be refrigerated in an airtight container for up to a week. Freeze for longer storage.
