Stuffed Sweet Potato Recipe

Preparing the stuffed sweet potato recipe

Preheat your oven to 400°F.

Wash and dry the sweet potatoes. Prick them in several places with a fork, then place them on a baking tray covered with parchment paper.

Place the sweet potatoes in the oven and cook for about 45 to 50 minutes, until tender. Check their cooking by inserting the tip of a knife.

Meanwhile, prepare the garnish. In a large bowl, combine the chickpeas, tomatoes, crumbled feta and chopped fresh herbs. Season with salt and pepper.

In a small bowl, prepare the vinaigrette by mixing the lemon juice with the olive oil. Season with salt and pepper to your preference.

Once the sweet potatoes are cooked, remove from the oven and let cool slightly.

Cut the sweet potatoes in half lengthwise.

Fill each sweet potato half with the mixture of chickpeas, tomatoes, feta and fresh herbs.

Drizzle the stuffed sweet potatoes with the lemon vinaigrette.

Serve immediately!
