Plant-based chick pea flour omelette recipe

Ingredients to prepare the vegan omelette recipe with chick pea flour
- 1 tbsp + 1 tsp olive oil
- 1 French shallot, chopped
- 1 red bell pepper, diced
- 2 cups young spinach
- 1/2 cup chick pea flour
- 3/4 cup vegetable broth
- 2 tbsp nutritional yeast
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/8 tsp turmeric powder
- Salt and pepper
Steps to prepare the vegan omelette recipe with chick pea flour
In a skillet over medium-high heat, heat a tablespoon of oil and sauté the shallot, red pepper and spinach for 5 minutes. Reserve in a bowl.
Meanwhile, in another bowl, whisk together flour, vegetable broth, baking powder, garlic powder, onion powder, turmeric, salt and pepper.
With a pastry brush, brush the pan with oil and heat over medium heat. Pour half of the omelette preparation (1/2 cup) and cook, uncovered, about 5 minutes on each side or until the omelet is cooked. Repeat this step for the rest of the preparation.
Garnish with the cooked vegetables and enjoy!
