Gaufre quinoa et courgette

Quinoa and zucchini waffle

These tasty waffles are sure to please and will add a touch of originality to a well-balanced light and healthy meal.

Ingredients

The waffles

  • 2 chia eggs (1 tbsp chia seeds, 3 tbsp water)
  • 1 cup cooked royal white organic quinoa (Gogo Quinoa)
  • 1 cup pancake mix (Gogo Quinoa)
  • 2 cups of vegetable milk
  • 1 cup grated zucchini
  • ½ cup grated Swisso fauxmage (Gusta)
  • ½ cup grated original fauxmage (Gusta)

The mayonnaise

  • ½ cup vegan mayonnaise
  • ¼ cup fresh herbs (rosemary, basil, cilantro, thyme)
  • 2 tbsp. tbsp coconut bacon

Instructions

  1. Combine chia seeds and water in a small bowl, set aside for 20 minutes.
  2. Prepare the quinoa according to the package directions.
  3. Preheat the waffle iron.
  4. Mix together the chia eggs, pancake mix and plant-based milk.
  5. Add the quinoa, grated zucchini and fauxmages.
  6. Coat waffle iron with cooking spray.
  7. Pour the batter into the preheated waffle iron and cook until the waffles are golden brown and crispy.
  8. Meanwhile, finely chop the fresh herbs, mix with the vegan mayonnaise and coconut bacon.
  9. Use a silicone spatula or tongs to lift the waffles from the waffle iron, spread a light coating of mayo over the waffles, top with additional fauxmage if desired.
