Chocolate-almond cups
These chocolate-almond cups will become your ultimate boost of good fats!
Made with delicious ingredients like almond butter and dark chocolate, these keto-style cups won't last long! Enjoy it before a workout for an energy boost or as a snack when you're feeling peckish.
The addition of organic MCT vanilla powder gives these cuts all the benefits offered by these fats. MCT powder is a form of digestible fatty acids that quickly convert into ketones, giving the brain, muscles and other tissues rapid, sustained energy.
Ingredients
- 1 scoop of Nutiva organic MCT powder
- 1 cup dark chocolate , roughly chopped
- 2 tbsp. tbsp Nutiva organic coconut oil
- 1/4 cup smooth, unsweetened almond butter
- 1/4 tsp. tablespoons of raisins , roughly chopped
- 1 C. teaspoon ground cinnamon
- ½ -1 tsp. stevia or erythritol powder (optional)
Preparation
Line a muffin tin.
Place the chocolate and 1 tablespoon of coconut oil in a small bowl. Melt in the microwave, stirring every 20-30 seconds.
Pour 1 1/2 tsp. of melted chocolate in each of the muffin cups for medium cups or 1 tbsp. tablespoons for the smallest cuts. Using a pastry brush or small spoon, spread the chocolate around the sides. Place in the freezer for 10 minutes to set the cuts.
Prepare the filling by combining the almond butter, raisins, cinnamon, MCT powder, remaining coconut oil and stevia/erythritol in a small bowl. Mix until uniform.
Remove the cuts from the freezer and place a tbsp. almond butter mixture for medium cups or 1 tbsp. teaspoon for the little ones.
Garnish each of the cups with the remaining chocolate.
Return to the freezer for 30 minutes or until the chocolate is completely set.
Remove the cups from the muffin tin and serve.
Store in the refrigerator.
