French toast with caramelized pears and goat cheese

The marriage of flavors is a culinary art. This week, I offer you a recipe that highlights this practice. A recipe that presents the very common sweet flavor of pear with the more particular flavor of goat cheese.

On to the recipe!

Ingredients

(for 2 people)

  • 2 large slices of crusty bread
  • 1 nice organic pear
  • Goat cheese from Fromagerie du Vieux St-François
  • 1 handful of flaked almonds
  • 1 handful of crushed pistachios
  • Maple syrup
  • A little butter

For the French toast mix

  • 1 egg
  • ½ cup of milk
  • ¼ cup maple syrup

Preparation

Mix all the ingredients for the French toast mix.

Cut the pear in 2 then into thin slices.

In a small hot pan, place a knob of butter with a small amount of maple syrup. Add the pears and let caramelize for ten minutes.

Meanwhile, dip the bread slices in the French toast mix to coat them well.

In a hot pan, lightly toast the French toast on both sides.

Cut the bread slices in half, spread goat cheese on one side then overlap the other slice. Spread with cheese on top.

Add the caramelized pears, a drizzle of maple syrup and sprinkle with almonds and pistachios.
