Recipe for peppers stuffed with Mac 'n Cheeze sauce

- 4 bell peppers, assorted colours
- 1 cup cooked rice
- 2 tomatoes, diced
- ½ cup corn kernels
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 lb ground meat, plant-based or animal
- ½ tsp garlic powder
- 1 tbsp olive oil
- Mac 'N Cheeze sauce
- Salt and pepper to taste

Preheat the oven to 350°F.
Cut the peppers in half and remove the seeds. Set aside.
In a skillet, heat the olive oil over medium heat. Cook the ground meat, breaking it up with a spatula. Season with cumin, coriander, garlic powder, salt, and pepper.
Add the diced tomatoes and corn, and simmer for 5 minutes.
Stir in the rice and mix well.
Stuff the pepper halves with the meat mixture and place them in a baking dish.
