- Preheat the oven to 375°F.
- Place the tortilla in a small tart pan or oven-safe dish, gently pressing the edges upward to form a crust.
- Prepare the filling: In a bowl, whisk the eggs with the cottage cheese.
- Add the chopped spinach, sun-dried tomatoes, salt, and pepper. Mix well.
