  • 1 large wheat or gluten-free tortilla
  • 2 eggs
  • ¼ cup cottage cheese
  • 1 handful fresh spinach
  • 3–4 pieces of sun-dried tomatoes, chopped
  • Salt and pepper to taste

Instructions for Tortilla Crust Quiche Recipe

  1. Preheat the oven to 375°F.
  2. Place the tortilla in a small tart pan or oven-safe dish, gently pressing the edges upward to form a crust.
  3. Prepare the filling: In a bowl, whisk the eggs with the cottage cheese.
  4. Add the chopped spinach, sun-dried tomatoes, salt, and pepper. Mix well.
  5. Pour the egg mixture into the prepared tortilla.
  6. Bake for 12 minutes, or until the eggs are set.
  7. Remove from the oven and let cool for a few minutes before slicing.
