Quinoa and chickpea salad recipe
This quinoa and chickpea salad recipe proves that vegetable proteins are far from monotonous! Colorful, rich in nutrients, protein and fiber, it alone is a complete and appetizing meal. Ingredients for the quinoa and chickpea salad recipe
- 1/4 cup Red & White Quinoa GoGo Quinoa
- 1/4 cup chickpeas
- 2 tbsp hemp seeds
- 1/4 red pepper, diced
- 1/4 yellow pepper, diced
- 1/4 cup red onion, diced
- 10 whole or halved cherry tomatoes
- A few slices of cucumber, cut into quarters
- Fresh coriander, coarsely chopped
- Fresh basil, coarsely chopped
- A handful of dried cranberries
- A handful of cashews and walnuts
- Olive oil
- Salt and pepper to taste
Instructions for the quinoa and chickpea salad recipe
Cook the quinoa according to package directions. Let cool once cooked.
Mix all ingredients. Adjust seasoning to taste.
The salad will be tastier if it is prepared a few hours before consumption. Stored in the fridge in an airtight container, it will be fresh for several days.
