Berries and beets smoothie recipe
Beets for breakfast? Once you've tried this delicious berries and beets smoothie recipe, you won't be able to get enough. The natural sweetness of beets and the healthy toppings will give you the energy you need to get through your day. Roast several beets at a time; they can be stored in the refrigerator for several days.
Ingredients for berries and beets smoothie recipe
- 3 medium red beets, skin on
- 2 cups (500 ml) baby spinach leaves, packed, washed and squeezed dry
- 2 scoops Botanica's Perfect Green Food- Berry
- 1/2 lemon with peel, sliced and seeded
- 1 cup (250 ml) water
- Goji berries
- Hemp seeds, chia seeds, toasted nuts or fresh fruit, for garnish
Preparation for the berries and beets smoothie recipe
Preheat oven to 350°F (180°C). Place unpeeled beets in a large ovenproof saucepan. Add 1/4 cup (60 ml) water. Cover and place in oven. Bake for 50 to 60 minutes, or until beets are tender inside. Remove from oven and set aside to cool.
Peel and chop beets. Place in a high-speed blender with spinach, Green Food Berry Parfait, lemon slices and water. Blend until smooth and silky.
To serve, ladle generous portions into bowls. Serve with a variety of your favourite toppings.
