Tamari & carrot vinaigrette

Here it is, here it is, this 3rd and final recipe in the summer vinaigrette series: tamarind & carrot vinaigrette!

You can never have too many vegetables on your plate. This is exactly why I love this recipe so much. In addition to pouring it over a salad, it itself offers a small portion of vegetables, namely carrots!

When I was young, my mother told me to eat lots of carrots because they were supposedly good for eye health. Surely you’ve heard that before!? Although today I have to wear glasses, she wasn't entirely wrong... In fact, carrots, due to their richness in vitamin A, are beneficial for night vision. So ! So increase your carrot consumption with this tamarind & carrot vinaigrette recipe.

Ingredients

  • 1 medium carrot, roughly chopped
  • 1/4 cup coarsely chopped onion
  • 1/4 cup olive oil
  • 3 tbsp. tablespoon of white wine vinegar
  • 1 C. tbsp tamari soy sauce
  • 2 tbsp. teaspoon of sugar of your choice (optional)
  • 1 C. teaspoon finely chopped ginger

Preparation

Place all ingredients in a blender. Blend until smooth. For a more liquid texture, gradually add up to 1/8 cup water while mixing.
