This product includes 3 cereals:Kamut, corn and millet. It is the biological version and now hypo-allergenic corn bread that is popular in some countries like Portugal. We recently replaced wheat by Kamut; However, the combination of this cereal with our proprietary process of fermentation is now a low gluten bread (1% 1%).
In addition, corn that we use does not contain any genetically modified organism (GMO). In addition, millet is rich in methionine, an essential amino acid that is deficient in the legumes. There is no bread made of 100% corn.
