White tea is probably the first tea to have been consumed in China because it is the one who asks for the least transformation after picking. Like all the other teas, white tea comes from Camellia sinensis. Freshly picked, young tea leaves are simply watched for several days. Then comes the stage of the desiccation during which the leaves are dried to allow their preservation. The leaf then oxides naturally and takes a green-gray hue.

The "Bai Mu Dan" (or "paï mu tan" according to spellings) meaning "white peony" is a vintage of very famous white tea. His best wines come from the province of Fujian in China. At tasting, they offer a slight astringency, followed by zesty and flowery notes.
