Umeboshi plum dough is made from fresh ume plums. They have been macerated with salt and shiso leaves. These marinated plums are then reduced by mashed. They are served as a condiment with rice dishes and sushi. Its acid and salty taste adds a small I do not know what to your recipes of sauces, marinades, vinaigrettes and others.
