Cette farine de blé à pain tamisée biologique est produite par la mouture de blé biologique. Elle est tamisée pour retirer le son et la rendre plus légère. Cette farine, parfois appelée farine bise, se trouve à mi-chemin entre la farine blanche et la farine entière. Elle est très prisée en boulangerie. Cette farine absorbera plus de liquide qu’une farine blanche non blanchie tout usage.
