Bob's Red Mill Gluten flour is made from the natural protein found in the endosperm of the wheat bay. When combined with water, it becomes very elastic. Added to the bread dough, it helps to retain gas and cooking vapor which gives more volume at the cooked break. It can be particularly useful for cooking breads based on rugged flour and whole grain cereals.

Wheat gluten contains 75 to 80% protein. Add about a tablespoon per cup of flour in your bread recipe. This will improve the texture and elasticity and will help your bread to lift. Can also be used for the manufacture of seitan.
