Flour - Whole Buckwheat - Organic

This flour is produced from organic black buckwheat and does not contain gluten. Historically the buckwheat originally comes from the Himalayas region. In the eyes of a botanist, the buckwheat is part of the same family as sorrel and rhubarb is a polygonaceae. It is from the category that we call pseudo cereal. One of these common appellations is the "black wheat" due to the color of its grains.

Comprising from 12 to 15% protein as well as all essential amino acids (including lysine) This flour is also very rich in fiber. To grind this flour, it is necessary above all to dissect it because its envelope brings a lot of bitterness. It adds crisp effect to waffles and pancakes. The buckwheat blends well with sweet or savory recipes, it blends greatly with chocolate or blue cheese. It is better to combine buckwheat flour with wheat flour to avoid having a sketchy texture.
