Organic Khorasan Flour

This flour is produced from biological khorasan. Its gluten, different from that of wheat flour, makes it more suitable for the bakery. The whole organic Khorasan flour is distinguished by its slightly orange color and taste almost sweet, but without bitterness, reminiscent of notes of butter, hazelnut. Khorasan wheat contains 20 to 40% more protein than conventional wheat. It also contains fibers, iron, zinc, vitamins B2, B3 and E, phosphorus and magnesium. In the recipes, it absorbs much more water than a whole wheat flour however, like the gluten of this flour is different, it is recommended much less kneading the dough because it will tend to relax at the end of kneading and Become a very sticky.

Conservation:

The whole organic Khorasan flour is preserved for about 270 to 365 days. It is ideal to keep the flour in a sealed container in a cool, dry place and sheltered from light or freezer.
