Cauliflower nappa *, carrots *, radish Daikon *, garlic *, ginger *, gochugaru *, sea salt & amp; Marine algae. The lactoferment, also known as f lactic ermentation , is an ancestral method of food processing. During the fermentation process, lactic bacteria transform sugars into lactic acid as well as different components limiting the development of harmful bacteria. Vegetables and lactofermented fruits are not cooked, no preservatives are added and they do not contain vinegar. Although this method is not very well known here, it has been in several countries for hundreds of years.

3. When we mix all , fruits and vegetables relax their juice (osmosis) and we make sure that the product liquid covers the preparation. This creates an anaerobic environment favorable to the development of lactic bacteria. Our lactofermentations are deposited in ceramic, stainless steel and glass containers.
4. Finally , we let the preparation rest for a few weeks, or in some cases a few months at room temperature (21 degrees Celsius). * *

* It is during this time that the bacteria necessary for the fermentation activate and give us the wonderful final product that we put in pot!
