To make sushi ginger, tender ginger roots are finely tugged. They are then briefly pressed to salt, then marinated in a mixture of vinegar. They are thus named because they are almost always served with sushi or sashimis (raw fish). Ginger can be served at any time as a digestive help and supplement with meals, especially those with fish. It stimulates appetite, invigorates taste buds and facilitates digestion.
