Xanthan gum

Xanthan gum is elaborated from the outer layer of a tiny inactive bacterium called xanthomonas campestris . It is an excellent thickener all use for vinaigrettes and all sauces. Its exceptional ability to retain small food particles actually the ideal gluten substitute for bakery and gluten-free bakeries. In most recipes, one or two teaspoons are enough. Gluten free.
