Named Best Canadian Cheese in 2014 by the Canadian Fine Cheese Competition, this washed crust semi-farm cheese is made of pasteurized milk. It has a 45-day ripening period.
Under his orange crust hides an ivory paste with the creamy texture and the soft farm aromas of butter and herbs. On the palate, it is unctuous and melting. It tastes hazelnut, cream, butter and also presents a clover note at the end of the mouth. Its flavor is slightly acidic and salty, without bitterness.
The Baluchon has been produced since 2004. It bears this name because its creators want this cheese through all the tables, like a traveler around the world.
