French biological lenses

The French lenses, also called "Puy", are dark brown green and have a very firm texture. The lenses are an excellent source of folic acid and potassium. They are also a good source of iron and phosphorus, and they contain magnesium, zinc, thiamine, copper, niacin, vitamin B6 and pantothenic acid.

Cooking:

Wash and sort the lenses first. Cook on low heat in three times their volume of water for a duration of approximately 20 to 30 minutes or until the lenses are tender.
