The traditional practice of soaking and germination of the legumes dates from several centuries but has fallen into oblivion in our industrialized society and jostled by time. Scientific knowledge that explains how germination reduces nutrient inhibition and improves the bioavailability of specific nutrients have resulted in the popularity of this old practice. Sprouted legumes cooperate in half the time than non-sprouted legumes.

Soak in warm water 20 minutes. Rinse and cook a portion of lentils in three parts of boiling water for 30 minutes or until desired consistency.
