It is produced near Kyoto (the ancient capital of Japan) in the mythical Uji region, and more specifically in Ujitawara, the birthplace of Nagatani Soen, inventor of the sencha style. Matcha preparation
Matcha is a small green tea powder very fine. It is traditionally used in the Japanese tea ceremony, Chanoyu. We present here a simple way to taste at home this "liquid jade mousse".
To prepare a good matcha, just respect some very simple but precise steps. First, just get the Matcha box from the ½ hour refrigerator before preparing it for temping. Then, it is necessary to sift the amount of desired matcha. To do this, use a teaspoon for "scratching" the matcha in a small corarier type infuser or a sieve with flour. Taming the Matcha makes its foam much more creamy and avoids the formation of lumps.
Then warm your Chawan (bowl), discard the water, and wipe it. Put a tea tea teas sift in the bowl, or two chashaku (spoon in Matcha). Rinse your Chasen (tea whip) to soften its strands.
Pour 65 ml of water to 75 ° C on tea. Matcha should be able to drink in 3 to 5 sips only.
As soon as you have poured the water, start whipping energetically using the whip. Whip first in the bottom of the bowl, taking care not to crush the whip strands. When a foam starts to form, gently turn the whip towards the tea surface while continuing to whip, to break the big bubbles.
That's it! Tea is served. You can accompany your matcha of a slightly sweet treat, it is the tradition! Replace the unused parts of Matcha to the refrigerator. Tea keeps there six months.
