Tomato sauce at PuttanescaOur consistency tomato sauce at Puttanesca contains gables as well as pieces of green cup and olive that give it flavors and perfumes that reminiscent of a mixture of mustard, black pepper and lemon.
IngredientsTomato pulp and tomato coulis Datterino 80% (Italy). Extra virgin olive oil, green olives, onions, carrots, celery, raisins, sea salt, sprockets, capers, garlic, aromatic herbs. Basil, pepper, citric acid. May contain traces of milk.
UsesThe tomato sauce at Puttanesca is traditionally served with spaghetti that can also be replaced by pennes. Add anchovies to get a more salty version or, a spoonful of strong pepper puree or spicy herbal mixture to the Italian Favuzzi to put a touch of spicy. It is also an excellent base for the cacciatore chicken. The authentically Italian pasta dishes do not bathe in the sauce. The average proportions of tomato sauce and dough are 375 ml (1 ½ cup) for 500 g (1 pound). Do not throw all the water cooking pasta:it's a good idea to add it to the sauce. Incorporate from ¼ to ½ cup or a ladle of cooking water to your sauce before adding the pasta. This salt and starchy water gives not only flavor, but also helps the sauce to adhere to pasta, in addition to thicken it.
