The history of Moroccan mint tea begins in the 19th century during the Crimean War. Private Slavian ports, the British, who then have the control on the tea trade in Europe, open counters in Tangier and Essaouïra. Accustomed to consume infusions based on mint leaf decoctions Nanah, the Moroccans then discover Green Gunpowder tea, nicknamed "Pearl de China". They then decide naturally to associate these two exceptional ingredients.

Mint tea is offered and tasted in a sign of hospitality because, according to a Touareg proverb, "it takes three conditions to make the tea:time, embers and friends". It is perfect for completing a meal but it is also drunk throughout the day. Traditionally, mint tea is prepared in a typically Moroccan teapot, and is served as a very high which allows to oxygenate and reveal all its aromas. The presence of foam on the surface of the tea, also called the "turban", testifies to the success of the infusion.

The tea is served three times without changing the leaves. The aromas and the appearance of the infusion thus evolve through the tastings. An Arab proverb describes these three infusions:the first drink is bitter like life the second is as sweet as love the third is as soothing as death
