The vegetarian moussaka of happiness

Ingredients for tzatziki style sauce
- ¾ cup firm tofu (Sol Cuisine)
- 1 to 2 cloves of garlic, minced
- 1 C. fresh lemon juice
- Zest of ½ lemon
- 1 C. tsp white wine vinegar
- ¼ tsp. tsp sea salt
- Pepper to taste
- ½ English cucumber, grated, with excess water removed
- 1 ½ tsp. tsp dried dill
- ½ tsp. tsp dried mint
- 1 C. at the table olive oil (Maison Orphée)
Ingredients for the filling
- Pita bread (Aidan's)
- 2 to 3 tbsp. tzatziki style sauce mixture
- ¾ cup of your favorite Greek salad mix
- 3 to 5 balls for Greek moussaka, heated (Sol Cuisine)
Preparation
In a food processor, combine tofu, garlic, lemon juice and zest, vinegar, salt and pepper. Mix until you obtain a creamy texture. Add the oil.
Place the mixture in a bowl and add the cucumber, dill and mint.
Leave to rest in the fridge for 2 to 4 hours.
On the pita bread, place the topping ingredients.
Roll then enjoy!
