It was with the increase in people suffering from digestive sensitivities to gluten that a new food market was established. These people develop various symptoms and irritations. Is gluten really so bad?

Initially, gluten is not bad in itself. It is a source of proteins, vitamins and fiber. On the other hand, the balance of the raw food must be respected in order to avoid many problems. This increase is created by genetic modifications (GMO) and by the industrial addition of gluten in food processing. However, the digestive system does not adapt well to this rapid change.

The digestive system of each person, even within the same family, will manage the imbalance of gluten on the plate differently. It is then that we will see, or not, the appearance of the imbalances mentioned above. The absence of symptoms, however, does not mean the absence of gluten sensitivity. There may be a small or silent mess that takes place without our knowledge.
