Parfait pêche et mangue grillées

Perfect grilled peach and mango

This delicious gourmand parfait is ideal for breakfast or dessert. A layered yogurt interspersed with grilled fruit, enhanced with a crispy grilled topping. And the hidden benefits of the Omega mixture are a little extra for your health!

Ingredients

  • 1/3 cup (75 ml) quick cooking oats (Only Oats)
  • 1/3 cup (75 ml) chopped pistachios or almonds plus extra for garnish (Prana)
  • 1/4 cup (60 ml) all-purpose flour
  • 2 tbsp. tbsp (30 ml) light brown or amber sugar
  • 3 tbsp. tbsp (45 ml) melted coconut oil (Botanica)
  • Pinch of salt
  • 2 large peaches, peeled and pitted
  • 1 mango, peeled and pitted
  • 3 tbsp. tbsp (45 ml) brown sugar or coconut sugar
  • 1 cup (250 ml) plain yogurt
  • 4 tbsp. teaspoon (20 ml) of Omega parfait peach and mango (Botanica)
  • Maple syrup

Instructions

Preheat oven to 350°F (180°C).

In a medium bowl, combine oats, nuts, flour and brown sugar. Stir in coconut oil until combined. Add a pinch of salt.

Spread the mixture on a small baking sheet. Toast in the oven for 10 minutes or until the topping is crisp. Stir occasionally. Remove from the oven and place the baking sheet on a rack to cool.

Increase oven temperature to 500°F (260°C). Slice the peaches and mango, then spread them on a baking sheet. Sprinkle with sugar. Bake for about 5 minutes or until starting to brown in spots. Remove from the oven and let cool.

To serve, place a few slices of fruit at the bottom of two parfait glasses. Pour a spoonful of Omegalicious mixture into the bottom of each. Sprinkle fruit with some toasted oat mixture and add 1/4 cup yogurt. Alternate layers by repeating the steps, then finish with a little toasted oat mixture and a drizzle of maple syrup.
