What to do with this rapini?
With rapini, there is no loss. We eat the stems, leaves and buds. You might even sometimes see small yellow flowers which are also edible. Each part will have its own little taste with more or less bitterness. To prepare the rapini, simply wash it and cut the ends of the stems. Steam it. Grill it whole or in pieces. Otherwise, eat it raw for a stronger taste. It will perfectly complement a salad and go wonderfully with a vegetarian plate, a dish of fish, meat, poultry or pasta.
