Mediterranean plate

Falafel

Fattouchi salad

Ingredients

  • 2 cups cherry or grape tomatoes, cut in half
  • 1/2 English cucumber, finely diced
  • 3 shallots, finely chopped
  • 1 romaine heart, finely torn
  • 1/2 cup fresh mint leaves
  • Ingredients for the vinaigrette
  • 2 cups chopped sumac, previously soaked for 10 minutes in 2 cups of lukewarm water
  • 1 1/2 cup fresh lemon juice
  • 1 cup molasses
  • 1 garlic clove, minced
  • 1 cup white wine vinegar
  • 1/4 cup dried mint
  • 1/4 cup extra virgin olive oil
  • Salt to taste

Pita chips

  • 1 pita torn into bite-sized pieces
  • 2 cups extra virgin olive oil
  • Salty to taste

Preparation

For the salad, combine the vegetables in a large bowl. In another bowl, whisk together all the vinaigrette ingredients. Stir the vinaigrette into the salad a few minutes before serving.

For the pita chips, preheat the oven to 375F. Mix the pita pieces, oil and salt. Cook for 10 to 12 minutes, taking care to turn them halfway through cooking. Add the chips to the salad or on the edge of the plate.

Don't forget the falafel!
