Ingredients for cookie dough energy bars recipe
- 2 flax eggs (2 tbsp. ground flax seeds mixed with 4 tbsp. water, leave to soak for approx. 5 minutes)
- 1/4 cup maple syrup
- 1/2 cup peanut or almond butter
- 1/3 cup Vegan Pro vanilla-maple protein powder
- 3/4 cup almond flour
- 2 tbsp coconut flour
- 1/2 tsp. salt
- 1/4 to 1/3 cup chocolate chips
Preparation for cookie dough energy bars recipe
Line an 8" x 8" Pyrex-style baking dish and set aside.
In a medium bowl, combine all ingredients except chocolate chips.
Place the mixture in the dish and refrigerate. The refrigeration time will allow the mixture to solidify slightly.
Melt the chocolate and pour over the cooled mixture.
Return to the fridge until the chocolate hardens.
Cut into 8 equal parts. Keep for a few days in the fridge or longer in the freezer.
