Soft carrot cookies recipe

Lovers of sweet carrot treats will understand that you can never have too many! Carrot cakes and muffins are well known and appriciated, but what about carrot cookies? A delicious soft carrot cookie recipe that's quick to make, healthy and plant-based! It's sure to please kids and adults alike. The cashew glaze blends perfectly with the ginger and cinnamon flavors of the cookies. Enjoy with a cup of coffee for those afternoon munchies!

Dry ingredients 

Liquid ingredients

Glaze

* Cashews must be soaked in boiling water for 30 minutes. 

Preparation for Soft Carrot Cookies recipe 

Preheat oven to 350°F and line a baking sheet with parchment paper. 

Mix chia and water in a bowl. Wait 5 minutes. 

Meanwhile, in a small bowl, combine all dry ingredients. 

In a second bowl, mix all liquid ingredients (including soaked chia). 

Add the dry ingredients to the liquid mixture, stirring constantly. 

Add carrots and raisins. Mix well. 

Form 14 cookies on baking sheet and bake for 13 minutes. 

Meanwhile, place all glaze ingredients in a blender and blend until smooth. 

Remove cookies from oven and allow to cool before spreading glaze!
