Soft carrot cookies recipe

Ingredients for the soft carrot cookies recipe
Dry ingredients
- 1 cup oat flour
- 1 cup unbleached all-purpose flour
- 1 tsp. baking powder
- 1 tsp. ground cinnamon
- 1 tsp. ground cloves
- Pinch of salt
Liquid ingredients
- 1 tbsp. ground chia + 3 tbsp. water
- ¾ cup applesauce
- ¼ cup maple syrup
- 2 tbsp. coconut oil
- ¼ cup unsweetened vegetable drink
- 1 tsp. vanilla extract
- 1 cup grated carrots
- ¼ cup raisins
Glaze
- ½ cup soaked cashews*
- ¼ cup unsweetened vegetable drink
- 1 tbsp. lemon juice
- 1 tbsp. maple syrup
- 1 tsp vanilla extract
* Cashews must be soaked in boiling water for 30 minutes.
Preparation for Soft Carrot Cookies recipe
Preheat oven to 350°F and line a baking sheet with parchment paper.
Mix chia and water in a bowl. Wait 5 minutes.
Meanwhile, in a small bowl, combine all dry ingredients.
In a second bowl, mix all liquid ingredients (including soaked chia).
Add the dry ingredients to the liquid mixture, stirring constantly.
Add carrots and raisins. Mix well.
Form 14 cookies on baking sheet and bake for 13 minutes.
Meanwhile, place all glaze ingredients in a blender and blend until smooth.
Remove cookies from oven and allow to cool before spreading glaze!
