- 3/4 cup nuts of your choice
- 250g Medjool dates, pitted
- 1 tbsp maple syrup
- 2 à 3 tbsp peanut butter, preferably creamy
- 1/4 à 1/3 cup dark chocolate chips
Steps to prepare the date & chocolate vegan energy bites recipe
In the food processor, chop nuts.
Roast nuts over medium-low heat in a non-stick skillet with the maple syrup for 3 to 5 minutes or until they begin to change color.
In the food processor, puree the dates, then add the peanut butter. Mix again.
In a bowl, combine the roasted nuts and the date puree with a spoon.
Press mixture into pan until flat. Don't forget to put parchemin paper to facilitate unmolding.
Place in the freezer.
In a small saucepan over low heat or in the microwave, melt the chocolate.
Pour melted chocolate on the date mixture and add a few nuts, whole or chopped. Put back in the freezer for 20 to 30 minutes.
Cut into small bite-size squares and place in an air-tight container in the fridge or the freezer.
