Brunch every day!
Generally speaking, brunch is a weekend pleasure. Especially on Sunday. But with confinement, working at home, stopping school, closing businesses, etc. Brunch easily becomes a daily pleasure.
Make your meal a little healthier. Replace your bacon with maple-smoked tempeh. If you didn't know, tempeh is a plant-based protein derived from soy. It is a quite tasty fermented food. It marinates wonderfully and is easy to prepare. Here is a simple and delicious recipe.

Ingredients
- 1 package Noble Bean tempeh (from the frozen section)
- 1 tablespoon tamari or soy sauce
- 1 tablespoon of olive oil
- 1 tablespoon of maple syrup
- 1/2 teaspoon paprika
- 2 teaspoons of liquid smoke (optional)
- Salt and black pepper to taste
Preparation
Mix marinade ingredients in a bowl.
Slice the tempeh as thin as possible without it falling apart.
Leave the tempeh to marinate for at least 1 hour.
Heat a little oil in a pan and add the tempeh slices.
Cook for 1 to 2 minutes on each side over high heat until both sides are golden brown and crispy.
Enjoy with eggs/scrambled tofu and all those other foods that make brunch so delicious!
