Sugar free and low carb, our strawberry ice cream will keep you cool all summer long. As a dessert after a well balanced meal, in the afternoon by the pool or in the evening watching TV, with only 3.5g of net carbs per serving, the only valid reason not to eat this ice cream is not having it in your freezer !

Ingredients for the keto strawberry ice cream recipe
- 1¼ cup heavy whipping cream, cold
- 1 cup plain greek yogurt (full fat)
- 8-10 ounces fresh strawberries, sliced and chilled
- ½ cup Lakanto monk fruit sweetener
- 1 tsp vanilla extract
- Dash of salt
Instructions for the keto strawberry ice cream recipe
In a blender add strawberries, monkfruit sweetener, vanilla extract and blend until the texture is to your liking, with or without chunks.
In a large bowl, whisk together the yogurt and strawberry mixture until thoroughly combined.
In a stand mixer or with a hand mixer, whip cream until it forms firm peaks. Be careful not to over whip.
Gently fold the whipped cream into the strawberry mixture just until barely combined.
Transfer into an airtight container and freeze at least of 4 hours before enjoying.
Notes
Make sure to use full fat whipping cream and greek yogurt, it will ensure better result.
You may use frozen strawberries, but the fresh ones will add more flavor to the ice cream.
The longer you keep the ice cream in the freezer, the harder it will freeze. Take it out in advance to make scooping easier.
