Ingredients to prepare the green protein pancakes recipe
- 600g spelt flour
- 5 scoops of protein powder, vanilla flavor will allow to better taste the coconut matcha blend
- 3 tsp coconut matcha blend
- 1 tsp matcha powder, optional - will provide a greener coloration
- 5 tsp baking powder
- 1 2/3 cup egg whites
- 2 1/2 cups water
Steps to prepare the green protein pancakes recipe
In a large bowl, combine dry ingredients. Gradually add water and egg whites and mix until there are no more lumps.
For fluffier pancakes, add a little more water.
Heat a splash of oil in a non-stick pan and pour in about 1/10 of the mixture. Cook the first side over medium heat until small bubbles form on top. Flip and cook for less than a minute.
Repeat for the rest of the mixture.
Let cool on a wire rack before storing in the fridge in an airtight container. Can be kept for 6 months in the freezer.
