Ingredients for the extra chocolatey vegan frozen dessert recipe
- 2 1/4 cups unsweetened vanilla oat milk
- 1 cup granulated sugar
- 2 bags Enjoy Life Mini Chips
- 3/4 cup cocoa powder
- Pinch of pink salt
- Box of double chocolate cookies
- Plant-based whip cream

24 hours before preparing this recipe, place the ice cream machine container in the freezer.
Chocolate custard
In a medium saucepan on medium heat, add oat milk, sugar, mini chips (all but 1 cup), cocoa powder and salt. Whisk until the chocolate has completely melted into the dairy-free milk.
Remove chocolate custard from heat and allow the mixture to cool at room temperature for 10 minutes.
Transfer the bowl of custard to chill in the refrigerator for 2-3 hours, or until completely cool. Nice cream will not form properly if it is still warm.
To make the nice cream
Once the chocolate custard is completely chilled, pour into the ice cream machine container and turn the machine on. Follow the instructions of the ice cream machine.
Once the nice cream has thickened, transfer to a freezer-safe container and store in the freezer.
To prepare the chocolatey vegan dessert
Melt the remaining cup of mini-chips in the microwave for 1 minute. Stir then heat for an additional 30 seconds. Stir again until smooth.
Add 1 scoop of chocolate nice cream into the bottom of the serving dish.
Crumble double-chocolate brownie cookies and add a layer of pieces on top of chocolate nice cream. Then add a layer of plant-based whip cream. Poor melted chocolate chips and end with some more whipped cream.
Sprinkle with crumbled cookies and mini chocolate chips.
Serve right away and enjoy!
