Frozen Yogurt Bark

Summer is the perfect season to have fun with food. There are so many local varieties, freshness and colors, how else!

What do we look for to eat when it's hot? Something light and fresh, of course! I did my research and found this completely reinvented popsicle recipe. Use this idea to go further and create your own inventions.

On to the recipe!

Ingredients

1 pot of Yoso coconut plant-based yogurt
1 large ripe banana
1 C. cinnamon
1 C. teaspoon vanilla extract
1/2 cup fresh organic blueberries
2-3 tbsp. teaspoon raw sesame seeds

Preparation

Line a baking sheet with parchment paper, leaving a little extra length on the sides for unmolding.

In a blender, add the yogurt, banana, cinnamon and vanilla. Mix until smooth.

Pour the mixture onto the plate using a spatula to even it out.

Sprinkle generously with blueberries and press gently to secure them in the yogurt mixture.

Sprinkle the sesame seeds.

Place in the freezer and leave overnight.

Carefully peel off the frozen peel using the excess parchment paper. Cut into pieces with a sharp knife or simply break them up with your hands (be careful not to melt them!).

Serve immediately and store the rest in the freezer.
