Ingredients for the PB&J baked oats recipe
- ½ cup rolled oats
- ½ banana (or ¼ cup applesauce)
- 1 tbsp maple syrup
- 1 small egg (or a plant-based alternative)
- ¼ tsp baking powder
- ¼ tsp cinnamon
- ¼ cup milk of choice
- 1½ tbsp Nuts to You Peanut Butter Smooth
- 1 tbsp jam of choice
- Icing sugar for garnish
Instructions to prepare the PB&J baked oats recipe
Preheat oven to 350ºF and lightly grease an oven-safe dish big enough for a large serving of oatmeal.
Blend oats, banana, maple syrup, egg, baking powder, cinnamon and milk in a blender until smooth.
Pour ⅔ of the batter into the baking dish. Gently spoon Peanut Butter and jam onto the centre of the batter, then pour over the remaining batter.
Bake for 30 to 40 minutes, or until a toothpick comes out clean. Dust with icing sugar and eat while warm.
If you want to make this recipe more nutritious, add a scoop of protein powder in the blender. This could cause the mix to thicken. If it's the case, add a little more milk, but not too much.
