Grilled vegetables with a cheese flavor… without cheese!
Cheese has a taste that many people desire. Unfortunately for some, cheese is a forbidden food, for health reasons or by personal choice. How about a completely vegan food, rich in vitamins and proteins and with a cheesy taste? Yes, it exists !
Nutritional yeast
Nutritional yeast comes in the form of small, dry yellow flakes. It is, as its name suggests, a yeast. It is therefore a completely plant-based food, just like a mushroom.
In cooking, nutritional yeast is very versatile. Sprinkle it everywhere or add it to your recipes, like this one!

Ingredients
- 1 large eggplant, cubed
- 3 cherry tomatoes
- 2 sliced zucchini
- 1 onion sliced
- 1 pepper
- 4 cloves of pressed garlic
- 2 red peppers in large pieces
- 1 handful of green olives
- 2 tbsp. thyme
- 1 C. oregano
- 4 to 5 tbsp. tbsp olive oil
- ½ cup Yellow Superfood nutritional yeast
Preparation
In a large bowl, add all the vegetables and spices.
Add the oil and mix well to coat all the vegetables.
Place on 1 baking tray. Sprinkle with nutritional yeast and place in the oven for approximately 35 minutes at 400°F.
