Vegan mac n'cheese recipe
Are you a fan of mac n'cheese? Some will say oh my God, yes !!, while others will rather say phew, too many carbs and cheese and not enough nutrients! But that's over thanks to our macaroni and cheese recipe, which will please absolutely everyone!
Pur plant-based mac n'cheese recipe is so creamy, you'll think it's overflowing with cheese. But nope, no cheese in there! In addition to being dairy-free, this comforting dish is high in plant-based proteins. Intrigued ? Try it for yourself, you'll see!

Ingredients for the vegan mac n'cheese recipe
- 1 scoop unflavoured Iron Vegan Sprouted Protein
- 10-12 oz macaroni
- 1 1/2 cups potatoes, peeled and chopped
- ¾ cup carrots, peeled and chopped
- 1 cup water, reserved from cooking potatoes and carrots
- 1/8 cup extra virgin olive oil
- 5 tbsp nutritional yeast
- 1 1/2 tsp lemon juice
- ½ tsp onion powder
- ¼ tsp garlic powder, or 1 raw clove
- ¼ tsp ground mustard
- ¼ tsp paprika
- ¼ tsp salt
Instructions for the vegan mac n'cheese recipe
Cook pasta as directed, drain and set aside.
Boil the potatoes and carrots in a small pot until tender. Once cooked, reserve 1 cup of water from the pot.
With a slotted spoon, transfer the carrots and potatoes into a food processor and process until smooth, slowly pouring in half a cup of water.
Add the rest of the water and additional ingredients (except for protein powder and pasta) and process until thoroughly mixed.
Add protein powder and process again, scraping down the sides as needed until everything is blended smoothly.
Pour the “cheese” sauce over the pasta and add toppings such as green onion, herbs, and chili pepper.
If you want to kick it up a notch, pour the mac n'cheese in an oven-safe container and sprinkle a generous amount of plant-based cheese. Place it a few minutes on broil in the oven. You'll have a mac n'cheese au gratin !
