Mac n'cheese recipe perfect for school

Accompanied by a few veggies, our mac n'cheese is well balanced for a great day at school. Carbs, lipids, proteins, fibers, everything is there. Even slyly added vegetables!

Ingredients for the mac n'cheese recipe
- 1 ½ cup high protein short pasta
- 2 cups butternut squash, peeled and diced
- 1 yellow onion, chopped
- 1 garlic clove, halved
- 2 cups chicken or vegetable broth
- 2 tbsp extra virgin olive oil
- ½ cup unsweetened oat milk
- 1 tbsp tomato paste
- 2 tbsp yellow mustard with turmeric
- 1 tbsp herbed sea salt
- 1 ½ - 2 cups old cheddar and parmesan, grated
- Optional: ½ tsp cayenne pepper
Instructions for the mac n'cheese recipe
Cook the pasta according to the instructions. Drain, then set aside in the pot.
In another pot, bring the broth to a boil. Add the squash cubes, onion and garlic and boil until squash is very tender (about 15 to 20 minutes).
Once cooked, pour the contents of the pot into a blender and add the oil, milk, cayenne, tomato paste, mustard and salt.
Mix well until you get a creamy and smooth sauce. Pour the sauce into the pot, over the drained pasta.
Return to heat and add cheese. Stir continuously to avoid sticking.
Heat until cheese is melted. Check the seasoning, adjust if necessary.
Broil in the oven for a few minutes.
