Thym, blueberry, kombucha mocktail recipe
No alcohol? No problem! Alcohol-free cocktails, or mocktails, have nothing to envy to alcoholic beverages. Whatever your reason for skipping a drink, it shouldn't ruin the party. It just takes the right recipe so you don't feel like you're pouring yourself a glass of juice with a little sparkling water.
Ingredients for the thym, blueberry, kombucha mocktail
- 4-5 thyme sprigs
- 20-30 lavender leaves
- 1 cup + 1 1/2 cup blueberries
- 750ml bottle Remedy Kombucha Wild Berry
- 2 tbsp water
- 1 tsp lemon juice
- 1 tsp cinnamon
- 1 tsp maple syrup (optional)
- 2 tbsp chia seeds
Steps to prepare the thym, blueberry, kombucha mocktail
The lavender ice cubes
Place 2-3 lavender leaves and a few blueberries in the holes of an empty ice cube tray. Cover with water and place in the freezer to set over night.
The blueberry compote
In a small saucepan, combine 1 1/2 cup of blueberries with water, lemon juice, cinnamon and maple syrup. Simmer over low heat.
Once the berries have been cooked through, around 5-6 minutes, remove from the heat and mash with a fork. Allow to cool slightly before stirring in the chia seeds. Let rest.
Assemble the mocktail
Add ice cubes and a thym spring in a glass. Then add a few blueberries and a lashing of the compote. Fill up the glass with Kombucha.
