The muffin originated in Wales and appeared there around the 11th century. Its name comes from the word "Muffe", a German pastry. Initially, this culinary creation was intended to avoid waste. It was made with leftover bread, cake mix and potatoes. It was made into small ball-like shape and then fried in some kind of mold. Like today, it was soft on the inside and crispy on the outside. Although it was originally consumed by poorer people, the wealthy folks soon saw its potential and made their own version to accompany afternoon tea.
Following its creation, the muffin was exported and transformed according to each region. The English muffin, for example, looks like a savory crepe and is eaten mainly for breakfast, whereas here on the American continent it's eaten at any time of the day and it is generally sweeter resembling a small cake.
Ingredients to prepare the vegan apple muffin recipe
Makes 12 muffins
- 2 1/2 cups all purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 flax egg
- 1 cup oat milk
- 1 tbsp lemon juice
- 1/2 cup melted non butter spread (to reduce fat, replace with apple sauce)
- 1 tsp vanilla extract
- 1/2 cup coconut sugar
- 1 cup Vegan Pro vanilla-maple
- 2 cups diced apples, peeled
Steps to prepare the vegan apple muffin recipe
Preheat the oven to 375°F.
In a bowl, combine flour, baking soda, salt and Vegan Pro protein.
In a large bowl, beat the flax egg with the plant-based drink, lemon juice, non butter spread and vanilla. Add the coconut sugar while stirring.
Gradually add the dry ingredients to the wet mixture. Stir constantly. Add the apples and mix again.
Pour into muffin tins. For a touch of fancy, sprinkle with a pinch of coconut sugar and cinnamon.
Put in the oven and cook for about 25 minutes.
