Makes 4 9-inch crusts | Prep time : 15 minutes
Ingredients to prepare the gluten free vegan pie crust recipe
- 4 cups gluten free all purpose flour
- 1/4 cup flax seeds
- 1/4 tsp salt
- 1 cup olive oil
- 1 1/3 cup cold water
Steps to prepare the gluten free vegan pie crust recipe
Finely grind the flax seeds in a coffee grinder.
In a large bowl, combine flour, ground flax and salt.
In another bowl, combine oil and water. To successfully make an oil-based pie dough, the water and the oil must be very well emulsified.
Make a well in the center of the flour and pour in the liquid mixture. Mix everything well using a wooden spoon.
Cover the dough and refrigerate it for at least 3-4 hours (ideally overnight) before rolling it.
Instructions to roll the gluten free dough
Divide the dough and flour each portion before rolling them out so they won't stick.
Gently roll out each crust on a floured surface on one side only. Do not turn the dough.
If necessary, move it by gently lifting it and re-flour the surface and the rolling pin. Always make sure the dough doesn't stick.
Fold the dough in half and place it gently in the pie plate then unfold it.
Bake at 350°F on the lower rack, until golden brown.
You can freeze the uncooked rolled out dough, but make sure to separate them with parchment paper.
