Chicken-mushroom pizza on bun
A delicious, simple and friendly meal that falls somewhere between a grilled cheese sandwich and a pizza. Make sure to have enough for lunch the next day!

Ingredients for the chicken-mushroom pizza on bun
- 600 g chicken breast, boneless and skinless
- 1 cup white mushrooms, cleaned ans diced
- 1 medium size onion, finely sliced
- 2 Inéwa hot dog buns
- 1/2 cup L'Ancêtre cheese, grated
- 2 tbsp grape seed oil
- Pizza sauce
- Italian seasoning
- Garlic powder
- Smoked paprika
- Salt and peper
Instructions
Preheat the oven to 425°F.
Cut the chicken breasts into small bite-size pieces or strips, then place them on a plate. Sprinkle with Italian seasoning, garlic powder, paprika, salt and pepper. Flip the chicken pieces and season other side. Set aside. This step can be done in advance to give the chicken more time to marinate.
In a large skillet, heat oil over medium-high heat. Add the chicken pieces and mushrooms, then sauté for 5 minutes. Add the onion slices and continue cooking for another 3 to 5 minutes. Once the chicken is cooked, remove skillet from heat and set aside.
Slice the buns in half. Place the 4 halves, cut side up, on a baking sheet. Spread a generous amount of pizza sauce on each bun and sprinkle a little cheese.
Evenly distribute the chicken-mushroom mix, then top with the remaining cheese.
Put in the oven and cook for 12 to 15 minutes. Grill the top for a few minutes at the end of cooking.
Remove from the oven and serve with a green salad.
