Vegan queso

Nacho night coming up? I present to you a healthy vegan queso recipe that is as easy to prepare as it is to eat!

Ingredients

  • 1 cup cashew nuts , soaked for 20 minutes then drained
  • ½ cup chopped orange pepper
  • ¼ cup olive oil
  • ¼ cup nutritional yeast
  • 1 C. flax seeds
  • ½ cup unsweetened almond drink
  • 1 C. teaspoon garlic powder
  • ½ tsp. teaspoon onion powder
  • ½ tsp. teaspoon paprika
  • ½ tsp. teaspoon miso (available in stores)
  • ½ tsp. teaspoon of salt
  • ¼ tsp. teaspoon pepper
  • ½ tsp. lemon juice
  • ½ tsp. liquid aminos

Preparation

  1. Place all ingredients in a blender or food processor. Mix until smooth.
  2. Pour into a bowl and garnish with your choice of tomatoes or jalapeño peppers.
